پنجابی کڑھی

اجزاء:
دہی ۔۔ 2/1 کلو
چھاج ۔۔ 2/1 لیٹر
بیسن ۔۔ 250 گرام
ہلدی ۔۔ 1 چائےکا چمچہ
نمک ۔۔ 1 چائےکا چمچہ
کٹی لال مرچ ۔۔ 1 کھانے کا چمچہ
میتھی دانہ ۔۔۔ 1 کھانے کا چمچہ

تڑکا لگانے کے اجزاء:
لہسن کے جوے ۔۔ 6 عدد
گول مرچ ۔۔ 6 عدد
کڑھی پتے ۔۔ 6 عدد
تیل ۔۔۔ 2/1 کپ
زیرہ ۔۔1 چائےکا چمچہ

پکوڑے بنانے کے اجزاء:
بیسن ۔۔ 250 گرام
کٹی پیاز ۔۔ 1 عدد
زیرہ ۔۔ 1 چائے کا چمچہ
پسی لال مرچ ۔۔ 1 چائے کا چمچہ
نمک ۔۔ 2/1 چائے کا چمچہ
تیل ۔۔ حسب ضرورت
2/1 کپ میں تیل گرم کر کے 1 کھانے کا چمچہ میتھی دانہ ڈال دیں۔ جب خوشبوں آنے لگے تو اس میں ایک کھانے کا چمچہ کٹی لال مرچ، ایک چائے چمچہ ہلدی اور اور ایک چائے چمچہ نمک ڈال کر بھونیں۔ پھر آدھا لیٹر چھاج اور 250 گرام بیسن اچھی طرح پھینٹ لیں۔ اور ڈش میں ڈال کر آدھے گھنٹے ہلکی آنچ ہر پکنے دیں۔ اب پکوڑے بنا نے کے لئے 250 گرام بیسن، ایک چائے چمچہ زیرہ، ایک چائے پسی لال مرچ، آدھا چائے کا چمچہ نمک اور ایک عدد کٹی پیاز کے پکوڑے بنا کر تیل میں تل لیں۔ جب کڑھی پک جائے تو اس میں بنائے ہوئے پکوڑے ڈالیں۔ آخر میں آدھا کپ تیل گرم کر کے 6 عدد لہسن کے جوے، 6 عدد گول مرچ، ایک چائے چمچہ زیرہ اور 6 عدد کڑھی پتوں کع فرائی کریں اور کڑھی پر ڈال دیں۔

Here is the special Punjabi kadhi recipe to enjoy when weather and mood both are awesome. This kadhi is prepared in 3 steps i.e making the kadhi, secondly making pakora and finally making baghar. It is so spicy and delicious. Enjoy it with rice or tandoori naan.


How to Make Punjabi Kadhi (Summarized Method):


  • Heat 1/2 cup oil and add 1 tablespoon fenugreek seeds.
  • When it starts releasing aroma, add 1 tablespoon crushed red chillies, 1 teaspoon turmeric powder and 1 teaspoon salt and then roast well.
  • Then beat 1/2 liter buttermilk (chaaj) and 250 grams gram flour together. Add in a dish and cook at low flame for 30 minutes.
  • Now for making fritters (pakore), mix 250 grams gram flour, 1 teaspoon cumin seeds, 1 teaspoon red chilli powder, 1/2 teaspoon salt and 1 chopped onion together and fry in oil in order to make fritters.
  • Check if kadhi is ready, add fritters into it.
  • Finally, heat oil and fry 6 cloves of garlic, 6 whole chillies, 1 teaspoon cumin seeds and 6 curry leaves together. Sprinkle over the kadhi.
  • Hot Punjabi Kadhi is ready to serve.
  • Enjoy with rice or hot naan.

I was in need of exactly this punjabi kadhi recipe , you have presented it nicely. I make it another kari at evening and eat it with spoon. It is my favorite dish , I also eat it with boiled rice sometimes. It's definitely a perfect food.

Kadhi ki to taqriban ik hi recipe hoti hai or ik hi tarika kaar hota hai to phir itne saare naam kiyun jese punjabi kadhi, dahi kari, sindhi karhi waghera waghera. kia baghar or masalha jaat me farq hota hai kiya? kiyun ke dahi or besan to lazmi dalta hi hai.

Oh yea, this is my beloved recipe which I had almost forgotten. I made dahi kari with curry leaves and some masala items for baghar. It was very tasty. After my marriage I did not make it. Now I have seen the recipe and will definitely make.

yes, this kadhi looks special and contains additional spices than other recipes. I always have made it in a very ordinary way however today I am excited to see it. There are some additional ingredients that I saw in the recipe. They will make the taste awesome.
