Potatoes (boiled and mashed): 1/2 kg
Crushed Red Chillies: 1 tsp
Black Pepper: 1/2 tsp
Whole Coriander: 1 tsp
Cumin Seeds: 1 tsp
Salt: as per taste
Green Chillies: 4 to 6 chopped
Coriander Leaves: 1 bunch (chopped)
Lemon Juice: 4 tbsp
All Purpose Flour (Maida): 1/2 kg
Baking Soda: 1/2 tsp
Oregano Seeds: 1/4 tsp
Jaggery (Gur): 2 tbsp
Cooking Oil: as required for frying
How to make Potata Kachorian
METHOD:
1. Add salt, red chillies, black pepper, whole coriander, cumin seeds, coriander leaves and lemon juice to boiled and mashed potatoes. Mix well.
2. Refrigerate the mixture for 5 to 10 minutes.
3. Cook jaggery with 4 tablespoons of water for 2 to 3 minutes. This will make a syrup of jaggery and water.
4. Now combine all-purpose flour (maida) with salt, baking soda, oregano and jaggery syrup together, mix well and knead to a hard dough with addition of some water.
5. Wrap the dough in a wet muslin cloth and place aside for 10 to 15 minutes.
6. Now make small portions of the dough and fill each portion with 1 tbsp potato mixture.
7. Fold the edges of dough carefully with wet hands so that filling gets covered completely.
8. Press the edges well to seal kachori tightly.
9. Make all kachoris like this and refrigerate for 10 to 15 minutes.
10. Wet your hands again, place kachori on your palm and press lightly. Do the same with each kachori.
11. Heat cooking oil in a wok on medium flame for 3 to 5 minutes.
12. Deep fry all kachoris until it turns golden brown in color.
13. Remove it from the pan and place on an absorbent kitchen paper.
14. Fry all kachoris.
15. Delicious aloo kachori is ready.
16. Serve hot with green chutney, raita or aloo tarkari.
