for dough:
all purpose flour 1 cup
clarified butter (ghee)/oil 3 tbsp
salt 3/4 tsp (to taste)
water for kneading
for filling:
chick peas (cholay) 1 cup boiled
cumin powder 1 tsp
coriander powder 1 tsp
yogurt dip (Raita) - for serving
yogurt 1/2 cup
minced garlic 1/4 tsp
salt 1/2 tsp
red chili powder 1/4 tsp
cumin powder 1/2 tsp
How to make Cholay ki Kachori
METHOD:
First make dough... in mixing bowl add flour, salt, ghee and knead it with water
Leave it for at least 1 hr to rest
Make filling... first coarsely mash boiled chick peas... add cumin powder and coriander... add 3 -4 tbsp water... mix and cook till water dries
Transfer in bowl... and cool completely
Then, make small balls out of the dough
Roll in round shape
Put around a tablespoon of filling in middle
And start holding the edges in the middle... having falls downwards
Gather all falls in the middle
Twist and turn
Repeat the same process with remaining dough and filling
Deep fry them in hot oil till golden from all sides
For yogurt dip:
Whip yogurt with garlic, salt, red chili powder and cumin powder
Transfer in serving bowl.... and garnish with cumin powder
serve kachoris's with raita and enjoy.

Cholay ka kachori - hmm, i just saw it's recipe and it seems to be an interesting one. It is fine for me to try new recipes whether it is a kachori or any other snack. Because I am fond of cooking foods, I always take pleasure in trying newer foods.
This is really a tasteful kachori recipe. I have to eat kachori today evening, therefore I thought instead of buying it from somewhere else, why not to make it at home. So I decided to make it myself. And now I am walking through different blogs to finalize a recipe and I have finalized this one.
