MUTTO 1/2 KG,RICE 1/2 KG, ONION (finely cut) 3,
Cinnamon 1 stick ,
Cardamoms 4, green
Cardamoms 4, dried apricots 50 grams,yougurt 1/2 kg,
Milk 1/2 cup, mint (chapped) 1 bunch,
Green chillies ( chapped) 10 , black
Cumin seeds 1 tsp,
Turmeric powder 1 tsp, hot sp
Ices powder 1 tsp,
Ginger/
Garlic paste 1 tbsp , red
Chilli powder 2 tsp,
Nutmeg and mace powder 1/2 tsp,
Saffron Essence 1/2 tsp, yellow food color 1/4 tsp,
Salt to tast ,
Oil 250 grams.
How to make NAWABI BIRYANI ( ROYAL BIRYANI)
METHOD:
1/ heat oil in a pot and fry onions until golden. add meat and 1 cup water and cook.
2/mix red chilli , hot spieces ,ginger / garlic, cumin, turmeric, cinnamon , cardamoms, nutmeg and mace in yogurt,
3/ when meat become tender , add yougurt mixture and fry. boil rice and allow to cool.
4/ place meat in pot with green chillies and mint. top with rice.
5/ fry apricots in a little oil and on top of rice.
6/ pour yellow food color dissolved in milk over rice.
7/sprinkle saffron essence and dum.
