1 lb. Peeled Prawns
Salt
8 oz. Fresh Coriander
2 Green Chillies
2 Dry Red Chillies
1 lb. Onions
Oil for frying
1 Clove Garlic
1 Teaspoon Ground Cumin Seeds
½ Teaspoon Pepper
½ Teaspoon Turmeric Powder
2 ½ oz. Can Tomato Purée
1 oz. Ground Tamarind
1 Tablespoon Flour
½ Pint (U.S. 1 ¼ cups) Water
How to make Prawn Curry (Jinga Patia Curry)
METHOD:
Devein prawns and sprinkle with salt.
Wash coriander and pluck the leaves from stalks.
Finely mince the stalks with one green and one red chilli.
Combine with the prawns.
Now finely mince the onions, remaining chillies, garlic and 1 teaspoon coriander leaves.
Brown the onions in some oil.
Add garlic, coriander leaves, cumin, pepper and turmeric and fry for five minutes.
Add prawns, tomato purée and tamarind.
Lower the heat and cook for five minutes.
Mix flour with enough of the water to make a paste and add to the prawns.
Stir in remaining water and cook to thicken, stirring continuously.
Serve with rice.
