Mutton Biryani recipe is prepared by lining boiled basmati rice with a rich, creamy and spicy mutton curry and keeping it on a very low flame for few minutes (called dum or steaming). اجزاء:
مٹن ----- ایک کلو
نمک -----ڈیڑھ کھانے کا چمچ
کوکنگ آئل ----- ایک تہائی کپ
چاول ---- آدھا کلو
لہسن ---- ڈیڑھ کھانے کا چمچ
ادرک ----- ڈیڑھ کھانے کا چمج
پیاز ------ چار عدد
دہی ----- تین کپ
پسی لال مرچ ------ دو کھانے کے چمج
گرم مصالحہ ------ ایک کھانے کے چمچ
ٹماٹر ------ ایک عدد
لیموں ----- دو عدد
زیرہ ------ ڈیڑھ کھانے کا چمچ
دھنیا ----- ڈیڑھ کھانے کا چمچ
کیوڑہ ------ ایک چوتھائی کپ
آلو ------ تین عدد
پیلا رنگ ------ ایک تہائی چائے کا چمچ


Mutton Biryani banane ka tarika



ترکیب:
گرم تیل میں پیاز٬ ادرک اور لہسن فرائی کرلیں-
اب اس میں مٹن٬ لال مرچ اور ہلدی شامل کر کے تیز آنچ پر 10 منٹ کے لیے فرائی کریں-
اس کے بعد 2 لیٹر پانی اور نمک ڈال کر ہلکی آنچ پر اتنی دیر پکائیں کہ گوشت اچھی طرح گل جائے-
پھر اس میں زیرہ٬ دھنیا اور دہی شامل کر کے تیز آنچ پر پکائیں٬ اتنا کہ پانی خشک ہوجائے-
آلوؤں کو الگ سے تھوڑا ابالیں اور زردے کا رنگ ڈال کر قورمے میں شامل کریں-
پسا گرم مصالحہ٬ ٹماٹر٬ لیموں اور کیوڑہ ڈال کر چولہا بند کردیں-
بھیگے چاولوں کو نمک ملے ابلے پانی میں ابالیں اور نتھار کر چاول٬ قورمے میں شامل کرلیں-
اوپر سے زردے کا رنگ ڈال کر تیز آنچ پر رکھیں-
بھاپ بننے پر ہلکی آنچ پر 15 منٹ کے لیے دم پر چھوڑ دیں-
تیار ہونے پر گرم گرم سرو کریں-

Cooking Oil 1/3 cup
Chawal ½ kg
Lehsan 1.5 khanay ka chamach
Adrak 1.5 khanay ka chamach
Piyaz 4 adad
Dahi 3 cup
Pisi laal mirch 3 khanay k chamach
Garm masala 2 khanay k chamach
Timatar 1 adad
Lemon 2 adad
Zeera 1.5 khanay ka chamach
Dhaniya 1.5 khanay ka chamach
Kewrah ¼ cup
Aalo 3 adad
Peela rang 1/3 chaye ka chamach

Banane ki tarkeeb


Garm tail main piyaz, adrak aur lehsan fry kar lain.
Ab is main mutton, laal mirch aur haldi shamil kar k taiz aanch per 10 minute k liye fry karain.
Is k baad 2 litter pani aur namak daal kar halki anch per itni dair pakain k gosht achi tarah gal jaye.
Phir is main zeera, dhaniya aur dahi shamil kar k taiz aanch per pakain, itna k paani khuskh hojaye.
Aalo ko alag sy thora ubaal lain aur zarday ka rang shamil kar k qormay main daal dain.
Pisa garm masala, timatar, lemon aur kewrah daal kar cholah band kar dain.
Bheegy chawalo ko namak milay ublay paani main ubaalain aur nathar kar chawal qormay main shamil karain.
Oper sy zarday ka rang daal kar taiz aanch per rakhain.
Bhaap bannay per halki anch per 15 minute k liye dam per chhor dain.
Taiyar honay per garm garm serve karain.

Excellent recipe, but a little modification, Add half teaspoon of Nutmeg, and one star Anise makes the flavour burst in your mouth. This was my first time making Indian food and it was excellent. I cut the heat back on purpose but next time I believe I will make it as is. Thank you for posting this recipe it was wonderful.

I made the layers the opposite way like the recipe. I put meat in the bottom of the pot then the rice so that the rice will not stick in the bottom. Mutton biryani is a yummy recipe and the meat was very juicy.
