Chicken boneless (boiled) 150 grams
Puff pastry dough 250 grams
Almonds 15 peeled
Rice (soaked) 250 grams
Carrots (chopped) 1 cup
Peas (boiled) 1 cup
Whole black cumin seeds ½ tsp
Cloves 5
Black pepper corns 8
Salt 1 tsp
Oil 1 cup + 1 tbsp
How to make Yufkali pilive
METHOD:
• Heat one cup oil in a pot and fry almonds till golden.
• Fry chicken in same oil till it changes color, remove and set aside.
• Put cloves, peppercorns, salt, cumin seeds, chicken stock and rice in the pot and boil rice.
• Roll put pastry dough twice the length of its serving dish and place in another dish and refrigerate.
• Heat 1 tbsp oil in a frying pan and fry lightly peas and carrots.
• Cool rice and divide into 3 parts.
• Put 1 part of rice, ½ peas and carrots, ½ chicken and ½ almonds over puff pastry and repeat process.
• Put remaining rice and fold over with puff pastry.
• Brush oil over it.
• Bake in a 180°c pre-heated oven till golden.
