• 2 large or 4 small sole
• 1 dessertspoon ground coriander seeds
• 1 tablespoon ground cummin seeds
• 2 cloves garlic, crushed 1 onion, grated
• ½ -inch fresh root ginger, grated
• 1 teaspoon turmeric powder salt to taste
• water to mix
• I small onion, finely minced 1 green chilli, finely minced
• 1 tablespoon chopped coriander leaves
• oil for frying
FOR THE GARNISH
• ½ teaspoon carraway seeds lettuce
• 2 slices lemon
How to make Stuffed Spiced Fish (Masala Machi)
METHOD:
Clean, trim and wash the fish. Make diagonal cuts, in both directions, 1 to 2 inches apart on each side of the fish. Combine the next seven ingredients and mix to a paste with a little water. Divide the paste into two portions.. To one portion add the onion, chilli and coriander leaves then stuff the fish with it. Rub the remaining paste on to the outside of the fish. Let stand for 1k hours. Heat some oil in a frying pan and fry the fish until cooked and brown on both sides. Sprinkle lightly with the caraway seeds and serve on a bed of lettuce. Use lemon slices with a pinch of carraway seeds on each, for garnish.
Note: Preparation time 20 minutes, Cooking time 15 minutes, To serve 4
