Special Lahori Tawa chicken
Lahori tawa chicken is one of the famous dishes of Lahore. Tawa chicken is a dish generally cooked on roadside dhabba on big Tawas and tourist from all over Pakistan wandering in the city crave for this dish. It is named Lahori tawa chicken because chicken is cooked on high flame on a tawa which is a flat kind of pan. Tawa chicken is spicy in Taste and made when chicken is cooked with spices like salt , red chili , clack pepper and cumin powder , fenugreek powder, whole spices powder are added to give it some strong aromatic flavor . Lahori Tawa chicken has unique taste and flavor which is not present in any other spicy chicken recipe. A flat tawa is required in home to make this tawa chicken in original way. Lahori tawa chicken preparation time is 45 minutes approx once you have all ingredients on your table. Tawa chicken is served hot with Tandoori Naan along with yogurt and salad.

• Chicken cut four pieces, washed.
• Onions one chopped
• Ginger garlic paste 2 tablespoon
• Dahi or yoghurt 1 cup
• Lemon juice one cup
• Salt to taste or 1 teaspoon
• 8 Whole red chillies
• Black pepper powder 2 teaspoons
• Toamtoes chopped 6
• Zeera 1 tablespoon
• Butter 250 gm
• Garam masala zafrani one teaspoon
• Green chilies 1/2 cup chopped and deseeded
• Coriander and mint leaves mix one cup
• Sookhi methee 1 teaspoon
Oil one small cup
How to make Special Lahori Tawa chicken
METHOD:
1. Marinade the chicken with the ginger garlic paste, yogurt, turmeric, salt and pepper mixture. Leave in fridge overnight.
2. Next day steam the chicken pieces in a pressure cooker, steamer or pan for 15 minutes or till tender.
3. Now take a heavy tawa.
4. Add oil on top
5. Put chopped onions and lightly saute them. Add tomatoes and fry. When oil comes out, add chicken pieces and lower heat.
6. Add zeera, chilies whole, pinch of salt or to taste, methee, garam masala, and light fry. When the mixture blends add butter 250 grams.
7. Now garnish with chilies green chopped and coriander. Mint leaves and put lemon juice.
8. Mix well and serve with naan.
All the ingredients I am noting in my notebook for the preparation of Lahori Tawa Chicken will make this recipe more tasty because the smell of methi and the coriander helps to develop such a unique taste.
I insisted my wife to prepare special Lahori tawa chicken for me but she likes some other things so she tried to evade it and made things of her own choice. She also likes some of the appetizer and snack recipes however I particularly like and insist for this.
