1) Red chilli, roughly chopped 1 tsp
2) Onion, sliced 1
3) Mustard seeds 1/2 tsp
4) Coriander seeds 1/2 tsp
5) Tamarind juice 1/2 cup
6) Large brinjals 2
7) Cumin seeds 2 tsp
8) Tomatoes, pureed 2
9) A pinch of turmeric powder
10) Salt to taste
11) Oil as required
METHOD:
1. Cut the brinjal in round pieces.
2. Heat oil in a pan and fry mustard seeds, cumin seeds and coriander seeds.
3. Add brinjal and onions to it and stir fry. Add the remaining ingredients.
4. Mix well and serve.
