Oil: for frying
Long Eggplants: 5 pcs
Crushed Fresh Garlic (lehsan): ¾ (tsp)
Crushed Fresh Ginger (adrak): ½ tsp
Nigella Seeds (kalonji): 1 tsp
Fennel Seeds (saunf): 1 tsp
Crushed Tomatoes: 1 tin
Salt: 1 tsp
Chili Powder (lal mirch): 1 tsp
Coriander Powder(pisa dhania): 1 tsp
Turmeric Powder (haldi powder): 1/2 tsp
Fresh Coriander for Garnishing (hara dhania sajawat k liyay)
How to make Achari Baigan
METHOD:
First slice all eggplants lengthwise.
Now fry eggplants slices in oil until they get golden color, remove them from oil.
Add ginger and garlic in oil and fry a little.
Then add nigella seeds and then fennel seeds.
Now add a can of crushed tomatoes and cook for 4 minutes or so.
Then add salt, red chili powder, coriander powder, turmeric and add fried eggplants.
Cover it for a while on low heat.
Achari baingan recipe is ready.
Use fresh coriander for garnishing.
Serve hot with tandoori naan or chapati.
