1 leg of glutton
1 tsp saffron strands
1 tblsp milk
100 grams onions
25 grams ginger
2 tblsps poppy-seeds
2 cops sour curd
2 tbIsps garam masala
1 tblsp each of powdered coriander and cumin seeds
salt and chilli powder to taste
100 grams butter
11 cups cream
100 grams almonds (blanched and ground)
25 grams almonds (blanched, toasted and shredded)
silver or gold foil
How to make Mutton Shahzada
METHOD:
With a sharp knife, make deep gashes on the mutton leg. Dissolve the saffron in a tbIsp of hot milk and crush to a paste. Grind the onions, ginger and poppy-seeds to a paste and mix into the curd, along with the garam masala, coriander, cumin, salt and chilli powder. Melt the butter and mix into the curd paste, applying well all over on the mutton. Roast the mutton in a moderate oven for 3 hours, or until cooked. Remove from the oven, separate the leg from the gravy, and place the leg in a serving dish. Mix the cream, saffron and ground almonds into the gravy and cook over a slow fire till thick. Pour over the leg, sprinkle with the toasted almonds and cover with foil. Serve hot.
