Mutton Paya (Goat)
Mutton paya goat is basically stew or broth made with goat trotters when these trotters are cooked in water with some ginger, garlic and spices like red chili, turmeric powder, coriander powder and salt overnight so that the juice from the goat legs or trotters is extracted fully and mixed with the gravy . The juice which is taken out of these legs is very healthy and essential for bones and joints. Goat trotters are also taken as soup by some people but usually eaten with tandoori naan and chopped green chilies, coriander and sliced ginger. Mutton paya goat can be served as a full course meal. It is mostly cooked in winter season to remain healthy and warm. Mutton paya goat is also served in various restaurants in Pakistan and abroad. Bone marrow is added to the gravy of mutton paya goat to make it more flavorful and healthy. Winters are the time to make mutton trotters. They are loved during the winter season. Ingredients
Paya Goat - 12 ( goat trotters)
Onions- 4
Oil- 2 tbsp
Ginger garlic paste-4 tsp
Turmeric powder-1/4 tsp
Red chilli powder- 1 tsp
Coriander powder- 1 tsp
Green chilly- 2
Tomato- 1
Ghee (clarified butter)-2 tsp
Cumin seeds- 1 tsp
Fenugreek seeds- ½ tsp
Whole Wheat Flour- 2 tbsp
Garam masala pdr- 11/2 tsp
Salt to taste
How to make Mutton Paya (Goat)
Method
1) Heat oil in a cooker. Add onions and fry well. Add ginger garlic paste, turmeric powder and washed paya. Fry well for 15- 20 mins. Add green chilly, tomato , salt and

3) In a big pan heat ghee(clarified butter). Add Cumin seeds, Fenugreek seeds, ginger garlic paste, 1tsp Red Chilli powder, 1 tsp Coriander powder and Wheat Flour. Fry till you get a good smell. Add paya mix and boil. Add garam masala and boil. Serve hot with sheermal/ Arabic bread/ par, roti, garnished with coriander leaves.
