For Mango Salsa:
• 1 Ripe Mango (Aam) (peeled & cut in 1/2" dice)
• 1 small Red Bell Pepper (Shimla Mirch) (diced)
• ½ Jalepeno Pepper (finely minced)
• ½ Vidalia Onion (cut in ½" dice)
• 1 tbsp. Fresh Ginger (Adrak) (grated)
• ¼ cup Fresh Cilantro (Hara Dhania) (minced)
For Dressing:
• ½ tsp. Salt
• 1 tsp. Ground Cumin (Zeera)
• ¼ tsp. Cayenne
• Lime Juice (from 1 lime)
• 3 tbsp. Corn Oil
For Pizza:
• 1 large Pre-Baked Pizza Crust or you may prepare Homemade Pizza Dough
• ¼ cup Parmesan Cheese
• ¾ cup Asiago Cheese (grated)
• 1 can of Black Beans (drained)
METHOD:
• Preheat oven to 425 degrees. In a medium bowl, combine mango, cilantro, onion, ginger, bell pepper and jalapeno. Make dressing and toss with mango salsa mixture. And set aside.
• For the pizza: Combine the asiago and parmesan cheese . Sprinkle a quarter of the cheeses on the pizza crust. Spread the black beans on top (do not cover the whole crust with them.) Spread the salsa over the beans. And cover with the remaining cheese. Bake in the oven until the cheese has melted and is lightly golden.
