Mutton Leg Roast Recipe in Urdu


Break the leg bone from the centre and make deep cuts in meat


Roast red chili, coriander, cumin and coconut on tawa and then grind them together


Fry onions until they are golden brown


Add fried onions to yogurt and grind


Add salt, ground ginger garlic, ground all spice powder and other ground spices to yogurt and onions mixture and mix well


Marinate leg meat with spice mixture you just prepared and then store the leg in refrigerator for 4 to 6 hours


In a large size pan, heat oil for 2 to 3 minutes and place leg inside. Cook at medium flame for 5 to 7 minutes and then lower the flame and cook for 25 to 30 minutes more


Revert the leg to other side using two large spoons. Cook this side for around 30 minutes too, on low flame


When it's dried and tender, spicy goat leg roast is ready

Raan Roast Recipe in English

Ingredients:

  • Goat Leg:1.5 kg
  • Salt:as per taste
  • Ground Ginger Garlic:2 tablespoon
  • Fried Onions:1/2 cup
  • Red Chilies:10 to 12
  • White Cumin:1 tablespoon
  • Coriander Seeds:2 tablespoons
  • Crushed Coconut:4 tablespoons
  • All Spice Powder:2 tablespoons
  • Yogurt:1 cup
  • Cooking Oil:1/2 cup

Method

  1. While buying/qurbani time, get the femur bone broken from the centre and make deep slits.

  2. Roast red chili, coriander, cumin and coconut on tawa and then grind them together.

  3. Fry onions until they are golden brown, add them to yogurt and grind.

  4. Add salt, ground ginger garlic, ground all spice powder and other ground spices to yogurt and onions mixture and mix well.

  5. Marinate leg meat with spice mixture you just prepared and then store the leg in refrigerator for 4 to 6 hours.

In order to tender leg more, you can add 3 tablespoons papaya paste as well. Cook leg on low heat, if it did not within an hour, keep cooking until it's meat is
tenderized very well.
