Ingredients:

  • Cow Brain: 1 piece
  • Unpeeled Garlic Cloves: 3 pieces
  • Raw Crushed Onions: 2 pieces
  • Thin Chopped Tomatoes: 3 pieces
  • Yogurt: 1/2 cup
  • All Spice Powder: 1 teaspoon
  • Turmeric Powder: 1 teaspoon
  • Red Pepper Powder: 1 tablespoon
  • Whole Coriander: 1 teaspoon
  • Whole Black Peppercorns: 6 pcs
  • White Cumin Powder: 1/2 teaspoon
  • Salt: as much required
  • Thin Chopped Ginger: 2 tablespoons
  • Green Chilies (Cut Lengthwise): 4 pcs
  • Thin Chopped Green Coriander: 1 bunch
  • Lemon: 2 pcs
  • Oil: 1 cup

 

Method

  1. Wash brain and boil with unpeeled garlic cloves and black peppercorns.
  2. Heat oil in a wok, fry raw crushed onions until it turns to light pink in color.
  3. Now add sliced ginger, salt, chopped tomatoes, red chili powder, turmeric powder and all-spice powder and roast
    well.
  4. Now add brain, break with spoon, add oil slowly; meanwhile keep moving the wok (do not move the spoon).
  5. Now add crushed whole coriander, white cumin powder and black pepper powder and mix.
  6. Add lemon juice, thin sliced ginger, green chilies and chopped green coriander and place on stove for steam-cook
    (dam).
  7. Delicious Maghaz Karahi is ready to serve.
