3 eggs
3 cups grated carrots.Please grate them very finely and remove the core.
1 cup chopped walnuts
1 cup raisins
2 teaspoon baking soda
1 teaspoon salt
3 cups all purpose flour or maida
1 teaspoon cinnamon [ darcheeni powder]
1/2 teaspoon nutmeg [jaifal]
1 teaspoon vanilla
2 tablespoon honey
1 1/2 cup sugar
1 1/2 cup vegetable oil[ canola oil is the best]
For frosting:
1 packet cream cheese about 1 1/2 cups or 250 grams.Cheese must be soft.You can blend cheese at home also.Keep it firm and soft
1 1/2 cup powder sugar
1/2 cup butter
How to make Honey Carrot Cake
METHOD:
Take the eggs and mix in bowl with vanilla, sugar,eggs and honey.Mix with a hand electric mixer till smooth and lemon colored.
Take another bowl and mix flour, nutmeg,cinnamon, salt.
Take two bowls about eight inches diameter and oil them inside.Bowls must be round for the cake.
Mix the flour,nutmeg,cinnamon and salt and add to the other bowl slowly mixing with hand mixter till smooth.
Add raisins, walnuts and combine slowly with hand mixer [electric]
Preheat the oven to 350 degrees C and bake the cake for one hour or till a toothpick or skewer comes out clean.
Take out from oven when done and let it cool on a rack.
For frosting, beat the sugar,cheese and butter till soft and firm.
Cover the cake with the frosting and place in fridge or cool place.
Serve with tea.
