• Fish fillet 300 gm
• Curry leaves 2 – 3 (chopped)
• Olive oil 3 tbsp
• Basil leaves 2 tbsp (chopped)
• Oregano 1 tbsp
• Rose marry 1 tbsp
• Thyme 1 tsp
• Garlic 2 cloves (chopped)
• Sun-dried tomato 4 pieces
• Lemon juice 1 – 2 tbsp
• Green olives ½ cup
• Black pepper 1 tsp (crushed)
• Salt as required
• Grilled tomato for garnish
METHOD:
1. Take olive oil, green olives, basil leaves, curry leaves, oregano, parsley, rosemary, thyme, garlic and sun-dried tomato, mix it well and marinade fish in it.
2. Now take another bowl add salt, lemon juice, black pepper, mix together and add on to fish properly.
3. Wrap fish into plastic bag and leave it for ½ hour in freezer.
4. Then take out from freezer and leave it few minutes outside.
5. Heat grill pan, put fish and cook both side till it is ready.
6. Now add remaining marination and cook it till it’s thick and ready.
7. Serve in hot sizzling serving platter and decant hot sauce on top.
