• 2 onions
• 2 cloves garlic
• 2 green chillis
• Oil for frying
• 1 teaspoon ground cummin seeds
• ¼ pint (U.S. 2/3 cup) water
• 1 tablespoon rice flour, mixed with
• 2 tablespoons water four 8 oz. cod steaks salt to taste
• 3 tablespoons vinegar
• 2 eggs
• 2 teaspoons sugar

• chopped coriander leaves
How to make Fish in Parsee Sauce (Parsee Machi)
METHOD:
Slice onions, finely mince garlic and chillis. Heat a little oil in a saucepan, add the onions and fry till brown. Add the garlic, chillis and cummin; cook for five minutes. Pour water into the pan, bring to the boil and simmer for 10 minutes. Add the rice flour-paste and continue to cook until the gravy thickens. Add the fish and salt; cook till tender. Remove the pan from the heat. Beat the vinegar, eggs and sugar together and pour over fish. Re-heat without boiling. Garnish with chopped coriander leaves.
