Ingredients

• 2 Onions
• 2 Cloves Garlic
• 2 green chillis
Oil for frying
• 1 Teaspoon ground cummin seeds
• ¼ pint (U.S. 2/3 cup) Water
• 1 tablespoon rIce flour, mixed with
• 2 tablespoons Water four 8 oz. cod sTeaks Salt to taste
• 3 tablespoons Vinegar
• 2 eggs
• 2 Teaspoons Sugar
FOR THE GARNISH
• chopped Coriander leaves

How to make Fish in Parsee Sauce (Parsee Machi)

METHOD:

Slice onions, finely mince garlic and chillis. Heat a little oil in a saucepan, add the onions and fry till brown. Add the garlic, chillis and cummin; cook for five minutes. Pour water into the pan, bring to the boil and simmer for 10 minutes. Add the rice flour-paste and continue to cook until the gravy thickens. Add the fish and salt; cook till tender. Remove the pan from the heat. Beat the vinegar, eggs and sugar together and pour over fish. Re-heat without boiling. Garnish with chopped coriander leaves.
