ground chicken 2 lbs
salt 1 1/2 - 2 tsp
red chili powder 3 - 4 tsp
raw papaya paste 3 tbsp
fried and crushed onion 1/2 cup
ginger paste 1 tsp
garlic paste 1 tsp
cumin (roasted and crushed) 4 tsp
oil/ghee (clarified butter)
onion rings for garnishing and serving
fresh mint for serving
lemon - 2 for garnishing and serving
charcoal - for smoke
METHOD:
In a mixing bowl.... add chicken and then salt, red chili powder, raw papaya, ginger and garlic paste, cumin and onion.
Mix well till combined.... leave it covered for 3-4 hours... then refrigerate... and leave for at least 6 hrs or overnight preferred.
Heat charcoal... put it on marinated chicken... drop some oil on coal... cover immediately... and let it rest for few minutes... meanwhile chicken will get that BBQ flavor.
Heat ghee, add marinated chicken... and cook on low heat till all water dries... dish out.... and garnish it with lemon wedges and onion rings and enjoy.
