DAAL BAATI CHOORMA (Wheat Balls - Rolls)

Daal Baati Churma Recipe is really a fantastic, traditional and exclusively Rajasthani Recipe. You will notice that every recipe will be slightly different as every family has a specific way of making it. This is my family's recipe :) Note: Taking the measurements mentioned above, makes enough baatis for a family of 3-4.

Ingredients
Whole Wheat Flour (Aata): 1 cup
Chickpea Flour: 1/4 cup
Semolina (Suji): 1 tbsp
Clarified Butter (Ghee): 1/2 cup (melt and mix in the dough)
Fennel Seeds (Saunf): 2 tsp (roughly crushed)
Carom Seeds (Ajwain): 2 tsp (roughly crushed)
Salt: as per taste
Ghee: 1/4 cup (to baste baatis before and after baking)
How to make DAAL BAATI CHOORMA (Wheat Balls - Rolls)

METHOD:

Mix wheat flour, chickpea flour, semolina, clarified butter (melted), fennel seeds, carom seeds and salt together and knead it to make a firm dough. Place aside.

Heat broiler or oven on low temperature.

Take lemon-size ball from the dough, roll and smoothen in with your palms, press lightly in the middle using your thumb.

Make all baati the same way and place in a tray aside.

Now when you are done with making baatis, baste each baati lavishly with ghee and place on a pan or sheet aside.

Now bake all baati for around 20 minutes while flipping after every 10 minutes.
(Remember that timing may vary depending upon your oven. So keep checking them intermittently and once they are perfect with golden brown color, they are ready).


Serving:
Serve daal baati churma hot.
Remember to brush each baati with ghee.
(Traditionally, baatis are dipped wholly in ghee and then eaten however these days as we are more health-conscious, we avoid this much use of ghee).
You can also serve them with a tasteful daal.
The traditional dal to serve daal baati choorma is Panchmel dal and churma.
Baatis are broken in 3 to 4 pieces each depending upon it's size, dipped in daal and eaten.

How to Eat Dal Bati Churma

  • Brush each baati with ghee before serving.
  • If you want to enjoy it in purely traditional way, dip each baati in ghee and eat with daal.
  • A standard dal bati is broken into 4 pieces and eaten with dal however if your baatis are already in small size, you don't need to break it.
  • Baati is traditionally served with panchmel dal. Dip each baati or piece of baati in dal and eat it.
