Crisp Panfried Fish Fillets
This dish is crisp at the outside and very savoury at the inside.Best dish ever.
Ingredients
• 3 kg skinned fresh fishwith a lot of meat cut into fillets
• Salt to taste
• White pepper 2 tablespoons
• Rice flour 1 cup
• White flour sifted 1/2 cup. Mix the two flours.
• Black pepper 2 tablespoons
• Oil to fry.
• Butter 2 tablespoons
• Vinegar 2 tablespoons.
• Cut tomatoes wedges of 2 tomatoes.
• Cilantro leaves or parsley. 1/2 cup

How to make Crisp Panfried Fish Fillets
Method
1. Take the fillets and rub black and white pepper and salt and coat them thoroughly with mixture of both flours, vinegar,melted butter ,olive oil. .
2. Take a thick based frypan and add oil. Panfry the fillets about 2 minutes each sides till crisp and golden brown.
3. Use medium heat.
4. Remove excess oil on kitchen paper or drainer and serve with tomatoes and parsley/ cilantro leaves.
