Ingredients

6 Mangoes
4 tablespoons desiccated Coconut, soaked in
½ pint (U.S. 11 cups) hot Milk
Sugar to taste
½ Teaspoon ground Cardamom seeds
Pinch of Saffron powder
18 Almonds, shredded
Pinch of Salt

How to make Coconut Mango Fool

METHOD:

Peel mangoes, chop and pass through a coarse sieve. Strain coconut milk, discard the pulp and add the milk to the mango. Add sugar and stir till dissolved. Add cardamom, saffron, almonds and salt. Chill and serve with whipped cream.

Note: Preparation time 30 minutes, To serve 4
