1 cup Water
75 gm Butter
1 cup Plain flour
pinch Salt
4 Eggs
1/2 cup Custard powder
1 cup Milk
1/2 cup Sugar
1/2 cup Sugar for caramel sauce
METHOD:
Put water & butter in a pan, over low heat, until butter melted. Bring to
boil and then add flour & salt at once.
Stir until mixture form a ball & leaves side of pan. Remove from heat immediately.
Put the mixture into a bowl, with wooden spoon spread mixture upsides of bowl to allow mixture to cool slightly, about 5 minutes. Beat eggs into a bowl until just combined. Beat pastry on lowest speed of electric mixture. Add eggs gradually, beating well after each egg addition.
Mixture should be very thick, smooth & glossy. Drop rounded spoonfuls of mixture on to lightly greased baking try, allowing room for spreading.
Bake at 180 c 10 minutes, reduce heat for further 15 minutes, until the puff are golden color.
Remove it from the oven to dry. Make a slit into puff’s to fill cream or custard.
Put 1/2 cup sugar on frying pan , put on the heat to make caramel sauce, Dip the puff to caramel sauce to stick the puff’s to each other , crate a mountain or permits shape. With rest of the caramel sauce with help of wooden spoon sprinkle sauce on to the puffs.
