750 grams-1 kg Okra, lady finger
2 medium Onions
10-12 green chili
4 medium tomatoes
1 teaspoon full salt
1 teaspoon full coriander powder
1 teaspoon full chili powder
1 teaspoon full cumin seeds
½ teaspoon turmeric powder
hand full of Fresh coriander leaves
METHOD:
Cut okra.
Heat a generous amount of oil in a wok, put a piece of okra to check if its hot enough and then fry all of the okra at highest heat
Meanwhile cut tomatoes and slice the onions
Fry okra till the oil drips from the spoon and not sticky water of okra,if okra will be over cooked it will become hard.
Fry and remove them from oil, remove excess of oil from the wok and put sliced onions in the wok, when the onions become soft add tomatoes.
when the color of oil changes due to tomatoes add the fried okra, all of the spices, mix and then cut and add the green chilies and fresh coriander as well. mix every thing.
Cook covered on medium flame.
Don't cook too much otherwise it will get dried up, when the tomatoes are cooked put off the flame and serve.
