BAKED SPICED CAULIFLOWER (DUM GOBI) Recipe

INGREDIENTS:

1 Cauliflower (approximately 14 lb.)
1 onion
2 cartons yoghurt
2 tablespoons Tomato purée
I .Teaspoon ground Coriander seeds
¼ Teaspoon Chilli powder ½ Teaspoon garam rnasala ¼ Teaspoon ground Ginger Salt to taste
Little melted Butter


How to make BAKED SPICED CAULIFLOWER (DUM GOBI)



METHOD:

Trim the cauliflower. Mince the onion finely and mix with the yoghurt, tomato puree, coriander, chilli powder, garam masala and ginger. Mix well and season with salt. Place the cauliflower in a deep casserole and cover it with the spice mixture. Bake in a moderate oven (3750 — Gas Mark 5) for 2 hours. Baste occasionally with the sauce. Half way through the cooking time brush with a little melted butter. If the cauliflower becomes too dry cover the casserole with foil.
