Egg fried rice is a quick dish that you can prepare within 30 minutes. You do not necessarily need fresh rice to make this dish even, you can also make it leftover rice grains. Although, it makes a set with manchurian however it alone serves a complete food. Other options to accompany this rice are Indo Chinese foods such as chilli potato, garlic mushroom or chicken shashlik.
Sometimes these rice are made with boiled eggs, so it is up to you how you like it. If you don't like beaten eggs, you can separately boil the eggs and pour them to the fried rice as a final step. You can also adjust the quantity and inclusion of ingredients as per your taste.
Here is how to cook vegetable egg fried rice recipe
First stage in the recipe is to prepare rice. Add salt to rice and heat it until boiled. Now heat oil in a pan and fry chopped onions until brown. Now beat eggs in a separate bowl and add salt, black pepper powder, Chinese salt and whisk well again. Now add the egg mixture to browned onions; once eggs are fully cooked, add green onion slices, soy sauce and capsicum and carrots and cook at high flame. See if carrot water is fully dried, add salt, black pepper and Chinese salt and mix well. Now add boiled rice and mix again. Sprinkle green onion leaves and place for dam (steam-cook) covered tightly for 10 minutes. Delicious egg fried rice are ready to serve. Dish it out and serve with finely sliced spring onion.
