3 medium-sized tomatoes
1 tsp garam mauls (blanched and sliced)
1 tsp cumin seeds (roasted and pounded)
50 grams each of almonds, walnuts and cashewnuts
salt to taste
60 grams tamarind
a few drops of orange-red
60 grams jaggery (grated)
food colouring
100 grams peanuts (roasted)
a few drops saffron essence
5 green chillies
silver or gold foil
How to make Tomato Chutney
METHOD:
Chop a few almonds, cashewnuts and walnuts and set aside for garnishing. Cover the tamarind with a cup of hot water for 10 minutes and then squeeze out the pulp. Dissolve the jaggery in this. Separately, grind to a paste the rest of the almonds, cashewnuts and walnuts, along with the peanuts and green chillies. Now heat the tamarind and add tomatoes, jaggery, garam masala, cumin, salt, food coloring and nut paste. Cook till the mixture turns thick. Cool, pass through a sieve, mix in the essence and deco¬rate with the sliced nuts and foil.
