a small ball of tamarind (of the size of a lemon)
10 dry dates
10 fresh dates
25 grams raisins
25 grams almonds
1 tsp garam Masala
1 tsp dry ginger powder
1 tsp cumin seeds (roasted and pounded)
salt and chilli powder to taste
a few drops saffron essence
a few pistachios (sliced)
How to make Sweet Chutney
METHOD:
Soak the tamarind in- one cup of hot water for 15 minutes, and then squeeze out the pulp. Also soak the dry dates in water for 10 minutes and then drain, removing the seeds. Grind to a paste along with the remaining dates, raisins and almonds. Heat the tamarind, adding garam masala, ginger powder, cumin, salt and chilli powder. Now mix in the date and raisin paste. Cook till thick. Remove from fire, cool, mix in the essence and garnish with sliced pistachios. This chutney can be eaten immediately.
