Ingredients
1 ½ -2 lb. aubergines
2 green chillis oil for frying
1 teaspoon mustard seeds
½ teaspoon chilli powder
½ teaspoon ground cummin seeds
½ teaspoon ground coriander seeds
1 carton yoghurt
3 tablespoons water
1 teaspoon sugar salt to taste
How to make Spiced Aubergines With Chillis (Brinjal Masala Tarkari)

METHOD:

Cut aubergines into halves lengthwise, if very large cut into quarters. Slit chillis into halves. Now heat some oil in a saucepan and fry the mustard seeds. When they begin to crackle add the ground spices and fry for 2-3 minutes. Add the aubergines and fry well. Mix the yoghurt with the water and add to the aubergines along with the green chills, sugar and salt. Cover and simmer till the aubergines are tender and the gravy thick.
