·500g rocket, washed and spin dried
·6 dried apricots, thinly sliced
·3 – 4 sun dried tomatoes, thinly sliced
·1/4 cup walnuts
·50g feta cheese, cubed
·Fresh ground pepper
·Fresh ground sea salt
Dressing:
·1/2 cup olive oil
·1/3 cup fig balsamic vinegar
·1 tbsp. mustard
·2 tbsp. fig jam
·1/8 cup finely ground walnuts
·Fresh ground sea salt
·Fresh ground pepper
METHOD:
1.To prepare the dressing, mix all the ingredients and taste to make sure that the flavours suite your taste. Keep on the side
2.In a large serving plate place the rocket on the base, add the dried apricots, sundried tomatoes, walnuts, and feta cheese. Finally before serving, top the salad dressing across the platter and serve.
