3 cups of Pumpkin (cooked & pureed) (should equal 3 cups after it is pureed.)
½ cup of Pumpkin Seeds (toasted)
1 medium Onion (minced)
1 clove of Garlic (Lehsan) (minced)
1 tsp. Dried Oregano
1 tsp. Margarine or Olive Oil (Zaitoon Ka Tail)
3 cups Chicken Broth (with reduced sodium)
METHOD:
Heat margarine or olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook until softened.
Add the broth, pureed pumpkin and oregano and simmer for 30 minutes. Sprinkle with pumpkin seeds and serve.
