2 nectarines or peaches
125 g (4 oz) prosciutto (cured ham)
fresh raspberries, to garnish, if desired
RASPBERRY VINAIGRETIT:
3 tablespoons virgin olive oil
5 teaspoons sunflower oil
3 teaspoons raspberry vinegar
How to make NECTARINES & PROSCIUTTO
METHOD:
Divide salad leaves between 4 plates.
Slice nectarines, halve slices of proscuitto (cured ham) and wrap around the fruit. Arrange on the salad leaves.
To make the dressing, mix ingredients together in a bowl or screw- top jar. Drizzle over the salad, then serve garnished with fresh raspberries, if desired.
