SOUR CREAM DILL DRESSING:
155 ml (5 fl oz/ 2/3 cup) carton thick sour
Cream 2 tablespoons natural yogurt

Radish sauce
1 tablespoon chopped fresh dill
Salt and pepper
How to make ROLLMOP & APPLE SALAD
METHOD:
Cut rollmops into bite-sized pieces and put into a bowl. Core and chop apples, put into a second bowl with lemon juice; toss to prevent discolouration. Remove apple and add to the herrings with the fennel.
To make the dressing, mix ingredients together in a bowl, then stir into the salad. Transfer to a serving dish and serve garnished with slices of hard-boiled egg and sprigs of dill.
