Chicken 1/2 kg boneless cut into 1 1/2 pieces.
Lemon 1
Lemon juice one cup
Ginger garlic paste 2 teaspoon
Olive oil 2 tablespoons
Rice 1/2 kg
1/2 teaspoon salt or to taste.Always use less salt
Green pepper pieces cut square 1 pepper
Onion square pieces 1 onion cut
Seedless grapes a dozen
Pineapple pieces 12
1 teaspoon red chillies flaked
Coriander leaves 1/4 cup
For dip:
Dahi or yoghurt i beaten 1 cup
Cucumber deseeded and chopped small
Mint leaves chopped 1.4 cup
Lemon sliced round one
How to make Mediterranean Chicken and Vegetable Skewers
METHOD:
For the dip in a small bowl mix beaten yoghurt,cucumber,mint 1/2 of leaves and mix.Sprinkle a bit of black pepper and mix.
Take a bowl.Mix chicken cubes,mint leaves,coriander leaves,salt,olive oil,ginger garlic paste, and mix.
Take 5 skewers and place or thread a chicken cube,pineapple,grape, pepper green,onion lemon slice and then marinade for few hours topped with lemon juice,mint and coriander.Caot all skewers in a big dish with the marinade.
In the meantime put a pot of water on the cooing range and let it boil.Add prewashed and presoaked rice to it and let it boil till tender but not mushy.
Remove,drain water and its ready.
Now take a barbecue grill or oven grill on 200 degrees C and arrange skewers in a oven pan or on the barbecue grill.Lightly sptinkle occassional oil and let it cook for 2=3-5 minutes or till done.
Now take a big dish and put a layer of rice on it.
Place skewers, dip, bread sticks or ginger bread,drizzling some olive oil and lemon juice .
Its the most heart healthy food.
