470 g (15 oz) can chick-peas, drained
60 ml (2 fl oz/ ¼ cup) virgin olive oil
3 tablespoons tahini (sesame seed paste)
2 doves garlic
juice of 1 lemon
salt and pepper
1 teaspoon paprika
olives and coriander leaves, to garnish
TO SERVE:
carrot sticks or baby carrots celery sticks
radishes
METHOD:
Put chick-peas in a blender or food processor with 3 tablespoons of oil, tahini, garlic and lemon juice. Work until smooth, then season.
Spoon into a serving bowl or 4 individual dishes. Drizzle remaining oil over and dust with paprika.
Garnish and serve with the raw fresh vegetables.
