Ingredients

o 400 gms Brinjals
o 1/2 cup Dry Coconut (grated)
o 1 large Onion
o 1 tsp Garlic Paste
o 1 tsp Ginger Paste
o 2 tsp Cumin Seed Powder (roasted)
o 4 tsp Coriander Powder (roasted)
o 1/2 tsp Turmeric powder
o 1 tbsp Coriander Powder
o 1 tsp Red Chilli Powder
o 3-4 Curry Leaves
o 4-5 twigs Coriander Leaves
o Oil for frying
o Salt to taste
• -Tamarind paste( I like to add Tamarind since i belive it gives an excellent taste together with Brinjals)

How to make FRIED EGGPLANTS

METHOD:

1. -Grind roasted cumin seed powder, coriander and coconut.
2. -Slit the brinjals, place them in salted water and fry till it turns soft.
3. -Heat the oil.
4. -Fry onions, ginger paste, garlic paste till it turns transparent.
5. -Add turmeric powder, salt and grinded mixture.
6. -Mix red pepper and add fried brinjals.
7. -Add Tamarind paste
8. -Add ¼ cup of water and boil it for 5 minutes.
9. -Garnish with fresh coriander leaves.
10. -Bhagaray Baingan is ready to serve.
