4 spring onions
½ pint (U.S. 1 ¼ cups) mayonnaise
½ teaspoon garam masala a few lettuces leaves

METHOD:

Cut the cauliflower into small flowerets. Boil until tender. Mix the prawns with the cauliflower. Mince the chilli and spring onions finely and blend into the mayonnaise with the garam masala. Combine with the prawns and cauliflower. Prepare a bed of crisp lettuce and pile the salad on top. Sprinkle with coriander leaves and chill before serving.
