For crispy shell:
all purpose flour 2 cups
cumin seeds 1 tbsp
ghee (clarified butter)/oil 4 tbsp
salt (to taste)
water
For filling:
potatoes 1 lb
turmeric powder 3/4 tsp
red chili flakes 1 1/4 tbsp
coriander crushed 1 1/4 tbsp
cumin crushed 1 1/4 tbsp
green chilies chopped 2 tbsp
coriander chopped 2 tbsp
oil 2 tbsp
oil for frying
How to make Crispy Aloo Samosa
METHOD:
First knead dough... in mixing bowl add flour, cumin seeds, salt, ghee and knead it with water and make a soft dough... and give it rest for at least 30 minutes.
For filling, boil potatoes and coarsely mash them
in a pan, heat oil.
Add crushed chili flakes, crushed coriander, crushed cumin and turmeric powder... fry it for 2 - 3 minutes... add potatoes... toss them well... cook for 4 -5 minutes
Transfer the mixture in bowl, add chopped coriander and chilies and let the mixture cool completely.
Now rolling part... make small ball out of the dough... give it oval shape.
Cut the oval half from the middle horizontally with sharp knife or pizza cutter
Now, wet the edges with water... and put a tablespoon full of filling in the middle of half oval
From the flat side start making a triangle... turn one side inward...
Over lap the other side...
And turn the triangle towards circular side and press gently with the wet finger to seal it
Repeat the same process with rest of the dough
Then, deep fry them in medium hot oil... fry till golden and enjoy.

You should provide crispy aloo samosain both in Urdu and English for all kinds of readers. People who live in Pakistan might have difficulty in reading and understanding English. Whereas people living outside Pakistan might get difficulty in reading Urdu, so provide all appetizer and snack recipes in both languages.
