Ingredients

2 kg Chicken, cooked
Paprika
1 Carrot, sl Iced and cut into flowers and 1 stick Celery, cut into thin strips, to garnish
CURRY MAYONNAISE:
60 ml Mayonnaise
2 tablespoons Lemon ju Ice
2 tablespoons single Cream
5 Teaspoons Tomato puree (paste)
1 Teaspoon Curry paste
2 tablespoons Mango chutney

How to make Coronation Chicken

METHOD:

Remove the chicken meat from bones, discarding skin and bones. Divide meat into neat pieces and place on serving platter.
To make the curry mayonnaise, put all the ingredients into a blender or food processor and work until smooth. Pour over the chicken and dust with paprika. Serve garnished with carrot flowers and celery.
