1 packed tortilla (6-8 tortillas)
1 large iceberg lettuce
4 boneless chicken breasts
2-3 tbsp lemon juice
1 tbsp balsamic-vinegar
1 tbsp paprika
1/2 tsp red chilly powder ( or use cayenne chilli powder)
Salt and pepper to taste
1/2 tsp dried Thyme
1tsp onion powder
1 1/2 tsp garlic powder
4 tbsp butter
1 tbsp olive oil
METHOD:
1. Mix the thyme, red chilly powder( or cayenne pepper powder), garlic powder, onion powder and paprika in a bowl.
2. Sprinkle this spice mix on the chicken breasts along with salt and pepper and leave it aside for 10 to 30 minutes.
3. In a Pan ad the olive oil and the butter and bring it up to heat till it starts foaming.
4. Now add the chicken and cover the pan with a lid. Cook on a medium low heat for 4-5 minutes till one Side becomes golden brown.
5. Once one did rid cooked flip the chicken breast and cook on the othe side. Sprinkle in the balsamic vinegar and the lemon juice and shake the pan lightly.
6. After another 3 minutes of cooking, once the other side of the chicken is cooked as well. Make sure all the excess juices in the Pan are mixed about so that both sides of the chicken remain moist.
7. Now take the chicken out and leave it aside to rest. Meanwhile roughly cut, wash and rinse the iceberg lettuce.
8. Take the tortilla out of the packet and one by one and heat it in another non stick pan without oil for 15 secs each side on medium heat.
9. Now plate up. In the center I the tortilla add the icebergs lettuce in roughly straight line. Then slice the a chicken breast and place it on top of the ice berg. Now tightly roll the tortilla from one end to the other and form it into. Roll.
10. Enjoy. Add beans, corn, and any other condiments that you like to the tortilla rolls. The options are endless.
