Ingredients

3 bananas, cut in half
6 large size spring roll sheets
1 egg
1/3 cup pistachios, finely chopped
1 - 2 basil leaves, finely chopped
3 cups vanilla ice cream
1 tbsp maple syrup, or honey

How to make Banana spring rolls with pistachio basil ice-cream

METHOD:

In a small food processor, mix pistachios, basil leaves and ice cream. Place in freezer for half an hour.
Wrap bananas in spring roll sheet. Place bananas at the base of spring roll sheet. Roll over the bottom of the sheet to cover banana, and then fold over the sides. Continue to roll of the rest of the sheet, and brush ends with eggs to secure the wrap.
Fry banana spring rolls until golden brown.
Serve banana spring rolls with a side of pistachio basil ice cream, and a drizzle of maple syrup.
