250g (8 oz) strawberries, hulled
mint or strawberry leaves, to garnish
HONEY LEMON DRESSING:
2 tablespoons sunflower oil
2 teaspoons lemon juice_
¼ teaspoon paprika
salt and pepper
How to make AVOCADO & STRAWBERRIES
METHOD:
To make the dressing, put all the ingredients in a bowl or screw-top jar and mix well. Set aside
Cut avocados in half, remove stones and peel. Dice the flesh and put into a bowl. If strawberries are large, slice or halve them, then add to avocado. Pour over dressing and toss together.
Divide between 4 dishes and serve garnished with leaves.
