Cut potatoes and turnips into 4 pieces each, carrot into medium size chunks and break cauliflower into pieces.

Heat oil and fry all vegetables separately (excluding capsicum).
|
|
Add salt, red pepper, coriander powder, nutmeg and mace powder, green cardamom and fried onions to yogurt. Mix and beat well.
|

Heat oil in saucepan, add ginger garlic paste and fry for 2 minutes.
|
|
Add spiced yogurt and cook unless oil floats on top.
|
|
Add all fried vegetables including capsicum. Mix well. Add half cup water.
|
|
Add all spice powder, white cumin and ginger. Cook for 5-7 minutes at low heat.
|
|
Remove from stove once vegetables are tender.
|
|
Add korma essence and cover the pan.
|
|
A very tasteful vegetable korma is ready. Dish out and serve.

Mixed Vegetable Korma Recipe
|
Ingredients:
- Potatoes: 3 medium
- Carrots: 2 medium
- Cauliflower: 1/2 kg
- Peas: one cup
- Turnips: 3-4 medium
- Capsicum: 2 medium
- Ground Garlic: 1 tbsp
- Salt: as per taste
- Yogurt: 1/4 kg
- Red Pepper Powder: 1 tbsp
- Ground Coriander: 1 tbsp
- Nutmeg Mace Powder: 1/2 tsp
- Korma Essence: 3-4 drops
- Bay Leaves: 2-3 leaves
- Green Cardamom: 2-3 pcs
- Water: as required

Method |
- Cut potatoes and turnips into quarters. Cut carrots into medium sized chunks and disintegrate cauliflowers.
- Heat cooking oil in a wok at medium heat for 3-5 minutes. Fry all vegetables separately except capsicum.
- Now mix green cardamom, nutmeg mace powder, red pepper, coriander and fried onion in yogurt. Mix and whisk well.
- Fry cooking oil in a pan for couple of minutes at medium flame.
- Fry garlic for couple of minutes.
- Add whisked yogurt and roast until oil appears on top.
- Now add all fried vegetables along capsicum. Mix well.
- Add half cup water.
- Add all spice powder, white cumin and garlic and cook for 5 to 7 minutes at low heat.
- Add korma essence and remove from stove.
- Delicious vegetable korma in ready to serve.

Veg korma does not use meat but all healthy vegetables. It's recipe was originally introduced in South India (Kerala) and now it is part of Pakistani, Indian and Bengali cuisines. Other than vegetables, we will use salt, korma essence, nutmeg & mace powder, red chilli powder, salt, bay leaves and green cardamom.
Sometimes coconut milk is also used to veggie korma however for keeping it easier for most of you, we are not using it in this recipe.
