Chicken Cheese Croquettes Recipe

Egg Filling: Mix mayonnaise, mozzarella cheese, mashed eggs, crushed red pepper and salt in a bowl.

Chicken Mixture: Mix chicken mince, green coriander, green chilies, crushed red pepper, all spice powder and salt in a bowl.

Place and spread minced chicken mixture (made in previous step) on your palm; add one spoon of egg filling (made in first step).

Now fold the piece of mince to form oval shaped croquette. Close from all sides well.

Beat one egg.
Mix all-purpose flour and corn flour together.

Dip croquettes in beaten egg and then roll in flours' mixture.

Heat oil in a pan and deep fry all chicken croquettes.

Remove once it becomes golden brown.
Hot chicken cheese croquettes are ready to serve.
Have with tomato ketchup and chili garlic sauce.

Chicken Croquettes Recipe in English

Ingredients:

Mayonnaise: 2 tbsp
Mozzarella Cheese: 1/2 cup
Minced Chicken: 1/4 kg
Eggs: 3 pcs
Green Chillies: 3 pcs
Green Coriander: 1/2 bunch
Red Chilies: 1/2 tsp
All Spice Powder: 1/2 tsp
All Purpose Flour: 1/2 cup
Corn Flour: 1/2 cup
Salt: as per taste
Cooking Oil: for frying

Method

Preparation of Croquettes Filling:

Add mayonnaise, mozzarella cheese, mashed eggs, crushed red pepper and salt to a bowl, mix them together and make filling for croquettes.

Chicken Workout:

In this step, we will make the filling for chicken croquettes recipe.
Add minced chicken, green coriander, green chillies, crushed red pepper, all spice powder and salt to another bowl and mix well.

Making Croquettes:

Now place some spiced chicken on palm, stretch with finger, put one spoon of egg and mayo filling (made in first step) and fold chicken from both sides to form an oval shaped croquette. Close croquette from all sides to pack the filling completely.
Beat an egg. Mix corn flour and all-purpose flour together.
Dip each croquette in beaten egg and then apply the mixture of corn and all-purpose flour.
Heat oil in a pan and deep fry all croquettes you made.
Once they become golden brown, remove from the pan.
Serve hot crispy croquettes with ketchup and chutney.

Overall this recipe is very easy, much easier than I anticipated croquettes to be. I'll probably cook an extra chicken next time to be sure I have leftovers for this recipe. The only thing I'll do differently next time is using my food processor to mince the chicken. I served it with mashed potatoes and it truly did take me back to my childhood.
