• 1/2 cup oul
• 1 tsp cumin
• 10 peeled garlic
• 10 small small whole red dry chillies
• 1 tsp each:
Fenigreek seeds
Mustard seeds
Nigella seeds
• 1 kg thickly sliced brinjals
• 1 tsp salt
• 1 tsp chillies powder
• 1 tsp turmeric powder
• 1 tbs roasted ground corriander
• 1 tsp roasted ground cumin
• 1/2 cup each roasted ground:
• Peanut
• Till
• Coconut
• 1/4 cup tamrind pulp
• 1/2 cup water
• 10 curry pattas
• 10 whole green chillies
How to make Tarkari wali Bagara Baingan
METHOD:
1 Heat oil in a wok
2 Add cumin,garlic and chillies
3 Fry till brown but not burnt
4 Add fenugreek,mustard and nigella seeds
5 Add the rest of ingredient except curry pattas and chillies
6 Let cook a little
7 Add curry pattas and green chillies
8 Cook till oil shows
9 Remove from heat
10 Serve with boiled rice

Serve cold
