How to make Sweet & Sour Pineapple Chicken
METHOD:
In a large non-stick skillet, put oil. Season chicken cubes and add to pan on medium high heat. cook till chicken is tender then remove to plate. Stir in pineapple chunks, juice, sugar, vinegar, ketchup and chicken stock and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken cubes, capsicum and cook for 5 minutes. Serve over rice.
