2 tablespoons butter
2 tablespoons flour
2 cups beef stock (or mix 1 beef stock cute with two cups of hot boiling water)
Salt
Freshly ground black pepper
1kg potatoes, peeled and cut
1/4 cup cheddar cheese curd (alternative option: mozzarella or provolone cheese)
How to make Quebecois-style Poutine (fries and gravy)
METHOD:
In a mediums size saucepan, melt butter with flour and stir until thoroughly combined. Cook for 8 to 10 minutes until it becomes a dark roux. Stir in the stock until smooth (tip: if it gets a bit lumpy, smoothen with a handblender) and season with salt and pepper. Bring to a boil, and then reduce heat to low and continue cooking for 10 to 15 minutes.
Peel the potatoes and cut fries. Soak potatoes in cold water for 10 minutes and wash out the starch. Drain and pat dry with a paper towel.
Fry the potatoes until golden brown, and drain on a paper towel. Season with salt and pepper.
To serve, add fries in individual size serving bowls or cups, add the crumbled cheese and top with hot gravy.
Eat immediately to enjoy the yummy, warm gooey cheese and wonderful flavours.
