I lb. okra, sliced
1 teaspoon turmeric powder
1-inch fresh root ginger, finely chopped
2 green chillis, finely chopped
Pinch of salt
1 level dessertspoon besan (gram flour) ½ pint (U.S. 1 ¼ cups) buttermilk
2 teaspoons chopped coriander leaves
How to make OKRA COOKED IN BUTTERMILK (BHINDANI KADHI)
METHOD:
Heat some oil in a saucepan and fry the okra gently. When well fried add the turmeric, ginger, chillis, and salt. Fry till the raw smell of the turmeric has gone and add the gram flour. Fry for a minute or two and add the buttermilk gradually, stirring constantly. Bring to the boil, lower heat and simmer for few minutes. Sprinkle with coriander leaves.
