Mutton ½ kg
Rice (boiled) ½ kg
Onions (finely cut) 3
Yogurt (whipped) ½ kg
Fresh Milk ½ cup
Cinnamon 1 stick
Cardamoms 4
Green Cardamoms 4
Dried Plums 50 grams
Mint (chopped) 1 bunch
Green Chilies (chopped) 10
Black Cumin Seeds 1 tsp
Turmeric Powder 1 tsp
Hot Spices Powder 1 tsp
Ginger/Garlic paste 1 tbsp
Red Chili Powder 2 tsp
Nutmeg and maze (powdered) ½ tsp
Saffron Essence ½ tsp
Yello food colour ¼ ts
(dissolved in milk) 1 cup
Water to taste
Salt to taste
Oil 250 grams
How to make Nawabi Biryani
METHOD:
• Heat oil in a pot; fry onions golden.
• Add meat and 1 cup water; cook.
• Mix red chilies, hot spices, ginger/garlic, cumin, turmeric, cinnamon, cardamoms, and nutmeg and maze in yogurt.
• When meat becomes tender, add yogurt mixture; fry thoroughly.
• Sprinkle green chilies and mint on meat; layer with rice.
• Saute plums in a little oil; place on top of rice.
• Sprinkle food colour and essence on top; leave on dum.
